Fresh nixtamal corn dough, with gruyere. Baby lettuces, roasted maitake mushrooms,
caramelized squash, edible mushroom "soil", toasted pepitas.
Fourth Course
Chicken Mole
Grilled chicken breast, Mole Colorado, mixed vegetables.
Surf & Turf Mexicano
Pan seared flank steak roasted root vegetables, asparagus and
jumbo lump crab meat. Smoked potato puree.
Fifth Course
Chocolate Tart
Salted caramel ganache, chocolate sorbet, marshmallow, almonds
